Chicken noodles

 Ingredients
2 tsp ground coriander
2 tsp ground cumin
2 tsp ground turmeric
700 grams chicken fillets, chopped
250 gr noodles 6 green onions 150 gr
Fresh baby corns
2 tblsp peanut oil
1 large carrot, sliced thinly
2 tblsp finely chopped coriander leaves


SATAY SAUCE
1/2 cup peanut butter
1/2 cup coconut cream
1/2 cup chicken stock
2 tblsp soy sauce
1 tblsp brown sugar
1 tblsp lime juice 


Preparation
Combine coriander, cumin and turmeric in a bowl, add chicken, mix well to coat with spices.
Place noodles in a large bowl, cover with boiling water.
Chop onions and corn diagonally into 4 cm pieces.
Heat half of the oil in a large frying pan; stir fry chicken, in batches, until browned.
Heat remaining oil in pan; stir fry corn and carrot until just tender. Return chicken to pan with noodles, onions, and satay sauce, stirfry until heated through.
Sprinkle with fresh coriander.
SATAY SAUCE: Combine ingredients in a bowl and mix it.

Ingredients
Chicken small pieces 1-1/2 Kg
Curd beaten 1 cup
Black pepper 1/2 tsp
White pepper 1/2 tsp
Salt to taste
Ginger garlic paste 1 TBsp
Garam masala powder 1 TBsp
Green-onion chopped 3
Green Chillies chopped 4
Ginger slices 1"
Oil 1/4 Cup

Cream to taste (optional)  


Preparation
In a pan take oil.
Saute ginger garlic paste.
Add chicken & fry till color changes.
When little water is left, add green-onion (leave some green part for later use).
Mix green chillies & ginger slices.
Beat curd & mix garam masala powder, black pepper, white pepper, salt & mix it in chicken.
Mix left over green-onion, more gingerClick to find more about ginger slices.

Sprinkle 2-3 tsp fresh cream if you like.
Take out in a bowl.

Colorful-Cheese-Omelet.

Colorful Cheese Omelet 

Ingredients:

  • 2 egg whites
  • 1 egg
  • 1 green onion, chopped
  • 2 tbsp chopped fresh baby spinach
  • 2 tbsp chopped sweet red pepper
  • 2 tbsp shredded cheddar cheese
  • 1/8 tsp hot pepper sauce

How to make Colorful Cheese Omelet:

  • Place egg, egg whites, spinach in a small bowl.
  • Add pepper sauce.
  • Whisk until well combined.
  • Set aside.
  • In a small nonstick skillet coated with cooking spray, saute red pepper and onion until tender.
  • Reduce heat to medium.
  • Add egg mixture to skillet (mixture should set immediately at edges).
  • As eggs set, push cooked edges toward the center, letting uncooked portion flow underneath.
  • When the eggs are set, sprinkle cheese over it.
  • Fold other side over filling.
  • Transfer into a serving plate.

Onion-Baked-Chicken.

Onion-Baked Chicken 

Ingredients:

  • 4 boneless skinless chicken breast halves
  • 1 cup dry bread crumbs or crushed cornflakes
  • 1/2 cup spicy brown mustard
  • 1/4 cup soy sauce
  • 2 tbsp dried minced onion
  • 1/2 tsp chicken bouillon granules (Chicken Bouillon has a lot of salt and preservatives it is the essence of chicken with a combination of salt etc-)

How to make Onion-Baked Chicken:

  • In a shallow bowl, combine together mustard and soy sauce.
  • Set aside.
  • Greased a baking sheet with cooking spray; set aside.
  • Toast onion in a skillet over medium heat until lightly browned.
  • Pour into a shallow bowl.
  • Add crumbs and bouillon.
  • Stir well.
  • Dip chicken in mustard mixture then coat with crumb mixture.
  • Arrange chicken breasts on the prepared baking dish.
  • Bake, uncovered, at 350 degree F, for 25 minutes or until chicken is tender and all juices run clear.

Chicken Pizza Burger

Chicken Pizza Burger

Ingredients:
1 pound of ground chicken
1 cup chopped red onion
1 – 6 ounce jar of mushrooms, drained
1 cup of bread crumbs
Sea salt
Freshly ground black pepper
2 teaspoon of dried oregano
1 teaspoon of garlic powder
Extra virgin olive oil
Tomato Sauce (Note: You can use ready made pizza sauce if you want.)
Sandwich Buns (Note: You can purchase buns if you want.)
Pizza cheeses (Note: I used Mozzarella, Parmesan, Romano and Asiago.)

Method:

Preheat oven to 375 F.
Dump ingredients into a glass bowl and work together with your hands until all ingredients are incorporated and the mixture is moist and sticks together. (Note: The ground chicken I got was pretty moist. If you have trouble getting it to come together because there isn’t enough moisture you can always add 1 beaten egg. I don’t think you’ll need it though.)
Form into 6-8 patties and place in a baking dish that has been brushed with olive oil:
Bake for 1 hour to ensure they are done through. Remove from the oven and start your assembly.

First you’ll place your cooked chicken burger on a bun:
Next you want to top the burger with some tomato sauce:
Then you want to top with your favorite Pizza cheese(s):
After that you’ll put the bun on top and eat!

Notes: Obviously this is a fork and knife kind of burger, unless you really want to get messy. You could also do this method with any type of ground meat…beef, turkey, chicken, etc.

INGREDIENTS:

* 3 ripe mangoes , peeled, flesh removed from stones and sliced
* 2 dried birds-eye chillies or a pinch of chilly flakes
* 2 tbsp caster sugar
* finely grated zest of 2 limes
* vanilla ice cream , to serve

METHOD:

1. Arrange the mango slices on a serving platter. Put the chillies and a little of the sugar in a mortar and pound to break up the chilli. Add the rest of the sugar, and the zest, and pound to incorporate until the sugar becomes speckled green.
2. Sprinkle the sugar over the mango slices and let guests help themselves, with scoops of vanilla ice cream.

Noodles and Salsa Chicken Salad

Ingredients:

* 400 g lean ground chicken
* 350 g fresh boiled noodles, rinsed and separated drained
* 1/4 cup salsa
* 227 g water chestnuts, finely chopped
* 1/2 small red onion, finely chopped
* 227 g bamboo shoots
* mint leaf, for garnish

Method:

1. Coat a pan with cooking spray, heat and add the chicken mince.
2. Cook, stirring until the mince is browned.
3. Stir in the noodles and salsa and stir-fry for 2/3 mins or until heated through.
4. Add the water chestnuts, onion and bamboo shoots.
5. Cook until heated through.
6. Serve sprinkled with the mint leaves.

Chicken filled Potatoes







Chicken filled Potatoes

Ingredients

8 medium potatoes

2 tsp corn flour
1 tbsp water
1 ½ cups chopped cooked chicken
125g mushrooms, thinly sliced
½ cup peas
220g can creamy chicken soup or thick chicken stock
2 tbsp chopped chives
2 tbsp milk,45g butter

Method
Bake or microwave potatoes until tender, stand for 15 minutes. Cut the potatoes in half, scoop out the flesh, leaving a 5mm shell; reserve potato flesh. Blend corn flour with water; combine in a pan with chicken, mushrooms, peas and soups, bring to boil; simmer uncovered, for about 3 minutes. Stir in the chives. Spoon chicken mixture into the potato shells. Mash reserved potato with milk and 15g of the butter, spoon into a piping bag fitted with a fluted tube. Pipe mashed potato over filling, drizzle with remaining melted butter. Bake in a hot oven for about 10 minutes or until lightly browned. Serve hot.

Macroni Salad

Ingredients

4 cups cooked macaroni
250 gm boneless chicken cut in strips
8 ounces chedder cheese cut in strips
1 can (8 to 9 ounces) pineapple tidbits drained
1/2 cup chopped sweet pickle
1 cup thinly sliced celery
1 teaspoon minced onion
1/3 cup diced pimento
1/2 cup salad dressing or mayonnaise
1 teaspoon salt

Method
Combine ingredients; blend well. Chill thoroughly and store in refrigerator.
