Apple Fritters

Apple Fritters

Ingredients

2 eggs
200 g (7 oz) plain flour
250 ml (8 fl oz) milk 
pinch of salt
450 g (1 lb)  apple for deep frying
2 tablespoons icing sugar or 2 tablespoons sugar 
1 teaspoon ground cinnamon

Method
Separate the eggs. Beat the yolks with the flour and the milk  to make a thick batter. Leave the batter to stand for 30 minutes. 2. Whisk the egg whites with the salt until stiff. Peel the apples and cut out the cores, then cut the apples into rings about l cm (1/2 in) thick. 3. Heat the oil to 180c (350f) in a deep-fryer or large saucepan. Stir the batter and fold in the egg whites. Dip the apple rings into the batter, transfer them to the hot oil and fry until golden brown on each side.4. Drain the fritters on absorbent paper and keep them hot in the oven until all the fritters are cooked. 5. Before serving, dust with icing sugar or sprinkle with a mixture of sugar and cinnamon
