Colorful Cheese Omelet
Ingredients:
- 2 egg whites
- 1 egg
- 1 green onion, chopped
- 2 tbsp chopped fresh baby spinach
- 2 tbsp chopped sweet red pepper
- 2 tbsp shredded cheddar cheese
- 1/8 tsp hot pepper sauce
How to make Colorful Cheese Omelet:
- Place egg, egg whites, spinach in a small bowl.
- Add pepper sauce.
- Whisk until well combined.
- Set aside.
- In a small nonstick skillet coated with cooking spray, saute red pepper and onion until tender.
- Reduce heat to medium.
- Add egg mixture to skillet (mixture should set immediately at edges).
- As eggs set, push cooked edges toward the center, letting uncooked portion flow underneath.
- When the eggs are set, sprinkle cheese over it.
- Fold other side over filling.
- Transfer into a serving plate.

Onion-Baked Chicken
Ingredients:
- 4 boneless skinless chicken breast halves
- 1 cup dry bread crumbs or crushed cornflakes
- 1/2 cup spicy brown mustard
- 1/4 cup soy sauce
- 2 tbsp dried minced onion
- 1/2 tsp chicken bouillon granules (Chicken Bouillon has a lot of salt and preservatives it is the essence of chicken with a combination of salt etc-)
How to make Onion-Baked Chicken:
- In a shallow bowl, combine together mustard and soy sauce.
- Set aside.
- Greased a baking sheet with cooking spray; set aside.
- Toast onion in a skillet over medium heat until lightly browned.
- Pour into a shallow bowl.
- Add crumbs and bouillon.
- Stir well.
- Dip chicken in mustard mixture then coat with crumb mixture.
- Arrange chicken breasts on the prepared baking dish.
- Bake, uncovered, at 350 degree F, for 25 minutes or until chicken is tender and all juices run clear.

Chicken Pizza Burger
Ingredients:
1 pound of ground chicken
1 cup chopped red onion
1 – 6 ounce jar of mushrooms, drained
1 cup of bread crumbs
Sea salt
Freshly ground black pepper
2 teaspoon of dried oregano
1 teaspoon of garlic powder
Extra virgin olive oil
Tomato Sauce (Note: You can use ready made pizza sauce if you want.)
Sandwich Buns (Note: You can purchase buns if you want.)
Pizza cheeses (Note: I used Mozzarella, Parmesan, Romano and Asiago.)
Method:
Preheat oven to 375 F.
Dump ingredients into a glass bowl and work together with your hands
until all ingredients are incorporated and the mixture is moist and
sticks together. (Note: The ground chicken I got was pretty moist. If
you have trouble getting it to come together because there isn’t enough
moisture you can always add 1 beaten egg. I don’t think you’ll need it
though.)
Form into 6-8 patties and place in a baking dish that has been brushed with olive oil:
Bake for 1 hour to ensure they are done through. Remove from the oven and start your assembly.
First you’ll place your cooked chicken burger on a bun:
Next you want to top the burger with some tomato sauce:
Then you want to top with your favorite Pizza cheese(s):
After that you’ll put the bun on top and eat!
Notes: Obviously this is a fork and knife kind of burger, unless you
really want to get messy. You could also do this method with any type of
ground meat…beef, turkey, chicken, etc.
