Chicken Pakora
Ingredients:
750 gm Chicken, cut into 8 pieces
1 tbsp Lemon (nimbu) juice
1 tsp Ginger-garlic (adrak-lasan) paste
Salt to taste
1/2 tsp Red chilli powder
1 Egg
5 tbsp Besan
1 tbsp Refined flour (maida)
Salt and black pepper (kali mirch) to taste
Vegetable oil for deep-frying
1/2 tsp (1 g) Chaat masala

Method:
1. Make deep incisions on the chicken pieces.
2. Marinate the chicken With lemon juice, ginger-garlic paste, salt, and red chilli powder for about 30 minutes.
3. For the batter, mix all the ingredients together in a blender.
4. Heat the oil in a wok (kadhai); dip the marinated chicken in the batter and then lower gently in the hot oil. Deep-fry on medium heat till light brown. Remove with a slotted spoon, prick each piece with a fork and keep aside for 10 minutes.
5. Fry the pieces again till golden brown. Remove and drain the excess oil on absorbent paper towels.
6. Sprinkle chaat masala before serving.
Chicken and Corn Fritters
Ingredients:
* 1 can (15-1/4 ounces) whole kernel corn, drained
* 1 cup finely chopped cooked chicken
* 1 egg, lightly beaten
* 1/2 cup milk
* 2 tablespoons butter, melted
* 1/2 teaspoon salt
* 1/8 teaspoon pepper
* 1-3/4 cups all-purpose flour
* 1 teaspoon baking powder
* Oil for deep-fat frying
* 1 cup finely chopped cooked chicken
* 1 egg, lightly beaten
* 1/2 cup milk
* 2 tablespoons butter, melted
* 1/2 teaspoon salt
* 1/8 teaspoon pepper
* 1-3/4 cups all-purpose flour
* 1 teaspoon baking powder
* Oil for deep-fat frying
Method:
Place corn in a large bowl; lightly crush with a potato masher.
Stir in the chicken, egg, milk, butter, salt and pepper.
Combine flour and baking powder; stir into the corn mixture just until combined.
In a deep-fat fryer or skillet, heat 2 in. of oil to 375°.

Make reasonable size petty & drop in oil. Fry for 3 minutes on each side or until golden brown. Drain on paper towels; keep warm.
Sweet and Sour Chicken Wings
Ingredients:
18 whole chicken wings, split
1/4 cup honey
2 tablespoons lime juice
Finely grated zest of one lime
1 clove garlic, minced
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup all-purpose flour
Method:
Oil (for deep frying)In a large bowl, mix together the honey, lime juice, lime peel, garlic, salt and ground black pepper.
Place the flour in a plastic bag and shake the chicken wings in the flour to coat.In a large skillet, fry the chicken wings in hot, 1 inch deep oil until cooked through.
Place the cooked wings in the honey/lime mixture and toss to coat well.
Serve immediately.
Mix Fruit Chat
Ingredients:
Apples (cut in cubes) 2
Pears (cut in cubes) 2
Oranges 2
Pomegranate seeds 3\4 cup
Seedless grapes 1 cup
Papaya 1
Bananas(cut in cubes) 3
Apples (cut in cubes) 2
Pears (cut in cubes) 2
Oranges 2
Pomegranate seeds 3\4 cup
Seedless grapes 1 cup

Bananas(cut in cubes) 3
Strawberry 1 cup or cane
Mango (cut in cubes) 1 cup
Salt 2 tsp.
Sugar 1\4 cup
Black pepper powder 3\4 tsp.
Chaat masala 2 tsp.
Lemons juice 2
Oranges juice 2
Salt 2 tsp.
Sugar 1\4 cup
Black pepper powder 3\4 tsp.
Chaat masala 2 tsp.
Lemons juice 2
Oranges juice 2
Method:
Put all the fruits into a large bowl. Sprinkle salt, sugar, black pepper powder and chaat masala.
Pour the lemon juice and orange juice and mix it well with a spoon.
Cover and slightly chill in the refrigerator before serving.
Optional to add Cream.
