Aftar Special Items

 
Dahi Bhaley
Ingredients:
2 cups dal maash dhuli (white) (Presoaked for 4-5 hours)
Pinch of baking soda.
1/2 teaspoon salt.
Pinch of heeng.
Method:
Grind the presoaked dal into a paste and add rest of the spices.
Mix well and leave for 30 minutes.
Then in a frying pan add 1 tbs. of oil and with the help of a spoon drop into the pan flat rounded patties and shallow fry till light brown.
DO NOT TURN OVER TO FRY OTHER SIDE.
Meanwhile heat oil for deep frying and then deep fry.
When golden brown remove and cool.
When serving, soak in a bowl of water and when a little soft squeeze out the water between palms and add to prepared yogurt.
YOGURT: Beat the yogurt adding a little water to a paste.
Add salt, red chili powder and 1/2 tsp. zeera powder.
Garnish with sweet Imli Chutney and Chat Masala.
 

 
 Shreded Chicken Sandwich
 Ingredients:
2 lbs. boneless chicken leg/thigh pieces.
1 tbsp garlic & ginger paste
1 green chilli
sprinkle of salt
pepper to taste
Mayonnaise
bread slices 
Method:
In small saucepan, put chicken in and add water until all chicken is covered. 
Add ginger & garlic paste, little salt and sliced chilli. 
Boil on med. heat until water evaporates or until chicken is completely done. 
When done, throw away chilli and shred chicken into big bowl. 
Add few tbspn. of mayonaisee and black pepper to taste. Mix until smooth paste. 
Spread on bread slices and serve as snack or meal

 
Yogurt Special
Ingredients:
1/4 cup milk
34 tbsp sugar (less or more as per you taste)
2 bananas sliced in circles
1/2 cup yogurt (whipped)
34 tbsp boiled plain rice
strawberry if you like.
Method:
This is quite a simple recipe simply add all the ingredients. take the rice first, add in yogurt sugar and milk, mix it well..add the sliced bananas mix it lightly.
Make sure the consistency of the mixture is thick and not very loose, simply watch the amount of milk you add for consistency. 
Chill well and serve.

Potato Chicken Balls
Ingredients:
Boiled potatoes(grated) 3 pcs
Hard boiled eggs(grated) 2 pcs
Cheddar cheese grated 1/2 cup
Chicken boiled and cut into small pieces 1 cup
Salt to taste
Black pepper to taste
Oil for frying
Bread crumbs 1 cup
Eggs to dip(beated)
Method:
Mix all the ingredients together (except oil, eggs and bread crumbs) into a smooth batter.
Make small balls.
Dip in egg, roll on bread crumbs and fry till golden brown.
Serve hot with ketchup.

 
Pakora Special
Ingredients:
1/2 pound Chickpea flour (Gram Flour "Besan" in local markets)
1 teaspoon salt
1 teaspoon red chili powder
1 teaspoon coriander seed powder
1/4 teaspoon baking soda
1/2 teaspoon black pepper
1 medium egg, beaten
1 medium onion chopped fine
1 large potato 1/4" cubes
oil for deep frying
water, enough to make paste
Optional Ingredients Spinach, eggplant, cabbage, fresh chilies
Method: 
Mix all dry ingredients in a bowl and add enough water to make a paste. Mix well.
Take spoonful at a time from the bowl of paste and deep fry it in hot oil til golden brown.
Serve with dipping sauces

THANDAI
Ingredients:
*1 – ½ ltr water
*1 cup milk
*2 cups sugar
*1 tbsp almonds
*1 tbsp watermelon seeds skinned
*½ tbsp poppy seeds (khus khus / posto)
*½ tbsp aniseed (saunf / mouri)
*1/2 tsp cardamom powder (or seeds of 2 black cardamoms, crushed)
*1/2 tsp rosewater
*1 tsp whole peppercorns, crushed
*1/4 cup dried / fresh rose petals
Method:
1. Take a pan and soak sugar in ½ ltr of water. Stir till all the sugar is dissolved in water. Strain to obtain the sugar syrup and keep aside.
2. Wash and clean all the dry ingredients. Soak in 2 cups of water. Keep aside.
3. Allow all the soaked items to stand for about 2 hours.
4. Take a blender / mix and grind all soaked ingredients to a very fine paste. Add 1 cup water to the paste.
5. Strain the paste through a strainer / muslin cloth and collect the extracted liquid in a bowl.
6. Add remaining water to the extract, press and try to extract more liquid.
7. Repeat the process for 2-3 times till the residue (on the strainer / inside the muslin cloth) becomes dry and it is impossible to collect more liquid.
8. Add milk, sugar syrup and rosewater to the extracted liquid.
9. Add cardamom powder / crushed cardamom and mix well.
10. Crush the buds and leaves of Cannabis and mix in the thandai.
11. Refrigerate for 1-2 hours. Serve chilled with ice cubes in tall glasses.
